Truly – this is happiness in a jar! When I first set out to have a go at making this I wondered if it would end up another jar in the cupboard resulting from an experiment that just sits there and eventually gets thrown out. I’m not sure why I had that reservation as I love hazelnuts and I love chocolate… Needless today that was a mere three weeks and three jars ago. I’ve finally jotted down a recipe that I’m very happy with and I’m thrilled to be sharing it with you all!
It is one of those recipes though that can be a little open to personal preference. If you want to it be more runny, add more coconut oil, if you would like it to be sweeter, add more honey. You get the idea!
120g hazelnuts – skins removed
2 tbs coconut oil
1 tbs raw organic honey
1 tbs organic cacao powder
pinch himalayan rock salt
In a high powdered food processor, add the hazelnuts and process until they are relatively smooth – in my food processor this takes about 10 minutes. Stop occasionally to scrape down the sides.
Add the remaining ingredients and continue to process for another 10 or so minutes or until the mixture is to the consistency that you desire. *Tip – if you put the coconut oil in first it helps the honey to run off the spoon!
Enjoy on breakfasts – goes beautifully on porridge! Fabulous on apples for a pre-gym snack! But let’s be honest, it’s best straight off the spoon and the best thing about it? It’s guilt free!! Just don’t do what I did and eat a whole jar in a matter of days!
