Chunky Cacao & Coconut Granola

I really felt like chocolate for breakfast the other day and other than putting 85% chocolate into my muesli (not the end of the world but not ideal on a daily basis!) I thought I’d have a go at making an chocolate and coconut granola and it turned out beautifully on the first go! Next batch I will have more pictures but I couldn’t wait to share the recipe with you! 

Ingredients:

80g Wholegrain Oats
80g Raw Buckwheat
50g Bran 
50g Coconut Flakes or Shredded Coconut (chunkier the better, organic if possible)
50g Mixed Seeds (I used Pepitas, Flax and Sunflower)
80g Mixed Nuts of choice roughly chopped (I used Almonds, Pistachios, Macadamias)
20g Chia Seeds
50g Coconut Oil
15g Cacao Powder
5g Mesquite Powder

*You can add a sweetener to this – maple syrup, honey, rice malt syrup but I find that the coconut oil is enough. I would suggest using only 40g coconut oil and 10g sweetener if you want to make it sweeter! I usually put a sweet Greek Yoghurt with mine so it balances out!


Method:

Preheat the oven to 150C.
Mix together the first seven ingredients.
In a jar, shake the coconut oil, cacao and mesquite powders until smooth.
Pour over the dry mixture and toss until well combined.
Line a large baking tray with baking paper and spread out the mix evenly.
Bake until crunchy – around 20 minutes.
Allow to cool and store in an airtight container. 

I suggest a 40g serving with Greek Yoghurt and your favourite fruit!


Side note: I have read that if you mix an egg white through the mix before baking it will help you get the chunky granola clusters! I am yet to try this but will give it a go on the next batch and report back!

  1. Yum, I love granola. I admire your ability to eat this with just the coconut oil and cacao though, I'd definitely be rushing to pour in some agave (terrible, I know… I have such a sweet tooth!). A healthy version of chocolate for breakfast is definitely genius! x
