Chow Mein

Serves 4
Calories: 340 per serve

Ingredients List:
250g Lean Beef Mince
1 Cup Green Cabbage – shredded
1 Brown Onion – finely chopped
2 Garlic Cloves – finely chopped
1 Medium Carrot – finely diced or grated
1 Celery Stalk – finely diced
1/2 Zucchini – grated
1/2 Cup Green Beans – chopped into 1-2cm pieces
200g Corn Kernels
1 packet Chicken Noodle Soup Powder Mix
2 Tablespoons Worcestershire Sauce
1 Cup Beef Stock
1 Tablespoon Curry Powder
S + P

Brown the onions, garlic, carrot, celery and zucchini over a medium heat or until onions turns translucent and carrot has softened.

Turn the heat up and add the mince, curry powder, worcestershire sauce and noodle soup mix. 

Once meat has browned add the stock and cabbage and simmer until cabbage is wilted. 

Add the beans and corn, season to taste. 

Simmer for a final few minutes until beans have warmed through. 

This tastes so good with either really fresh bread or toast and lots of butter – but that kind of defeats the whole “healthy version” idea..! I have NOT included this in the calorie count. 

This is my kind of comfort food, guilt free lunch on a cold winter day or an awesome hearty aroma to fill the house with after work. This is another dish that actually tastes even better the day after you’ve cooked it! It freezes really well too. 

I can’t pretend this is a pretty dish – it’s never going to plate up beautifully, it is what it is and it tastes bloody great! Enjoy this one, it’s one of my favourites!
