Moroccan Spiced, Chargrilled Vegetables with Bulghur

I try and eat a vegetarian meal at least once at week and this is one of my favourites. It’s easy and there is hardly any prep work required, it will test your patience though, as there is a lot of waiting and watching the stove.. But be serious – I’m talking 30 minutes here. Not 2 hours!

Having said that though, I DO NOT subscribe to the theory that cooking dinner is a hassle and if tea can’t be on the table in 15 minutes it’s not worth cooking. As you should be starting to realise by now, I love cooking. I find it therapeutic and I look forward to doing it every night. Plus, investing in your health by eating good food sometimes requires trying new food textures and flavours so make an effort with this one – go and find some bulghur (cracked wheat), if you can’t get it at your local supermarket surely there is a health food shop nearby.

Big bold flavours, but still a light meal and low calorie!
